We are so excited to bring you a new cheese that has won numerous awards including a gold medal at the World Cheese Awards in 2014! The base of this unique cheese is their famed BellaVitano, which is similar to a parmesan that finishes smooth and creamy. It is then hand rubbed with freshly roasted espresso that brings a sweet and rich flavor.

Purple Haze is a fresh goat’s milk cheese flavored with lavender buds and wild harvested fennel pollen. The name, inspired by Jimi Hendrix’s classic song, reflects more of the appearance rather than the taste of the cheese. This chevre has a sweet, flowery (but not overwhelming) flavor of soft, creamy texture. Pair it with crackers, ripe figs or Zinfandel.

Sapore Mitica® is another Italian cheese from the same area as Ubriaco del Piave – the Piave River in Treviso, Veneto – and by the same cheesemaker, Sergio Moro, one of the finest makers of Sottocenere. Sapore del Piave as it is sometimes called – which means Flavor of Piave in Italian – originated in the 1960s, produced by a partnership of third-generation cheesemakers and a cooperative of dairy farms in the area of Oderzo, Italy. Made from pasteurized cow’s milk and aged for 16 months, Sapore Mitica is similar to a young Parmigiano Reggiano: buttery, with loads of fruitiness, nuttiness, and a delicious crunchiness from tyrosine crystallization.

Pleasant Ridge is made in the style of traditional Alpine mountain cheeses, like Beaufort or Gruyère, but in a much smaller format (approx. 7 pounds). Aged over a year, flavor crystals have developed and add dimension to its creamy texture. The paste is almost amber in color and the flavors are rich and fruity, almost like blackberries. Sweet grass notes integrate beautifully with rich, slightly salty, fruity notes that linger pleasantly.

A semi-firm, washed rind cheese aged 5 months, Pawlet is unquestionably one of Consider Bardwell Farm’s most popular cheeses. It has a warm buttery-yellow, creamy paste and presents lactic and herbaceous aromas. The flavors are mild, sweet, grassy, a touch floral and nutty. Overall, we find it very balanced and savory. Consider recommends eating Pawlet with whole grain mustard, toast, and a wheat beer.
