Technically speaking, this cheese isn’t a traditional Gouda. Rather, it’s an offshoot known as Proosdij—a semi-firm to firm cheese that blends mesophilic and thermophilic starter cultures, resulting in characteristics reminiscent of both Gouda and Parmesan.
Crafted with simplicity and care, this exceptional cheese begins with pasteurized cow’s milk sourced from local, free-range, meadow-grazing Holstein cows. It contains only salt, cheese and starter cultures, and rennet. Each wheel is meticulously handcrafted using time-honored cheesemaking methods, then aged for one year in caves prior to release, allowing it to develop its signature texture and complex flavor profile.
Remove the cheese from the refrigerator at least 30 minutes to an hour before serving to reveal its full bouquet of aromas and flavors. Golden in color, it has a dense, slightly crunchy paste that becomes increasingly luscious and creamy as it warms to room temperature. The harmonious blend of Gouda’s silky-smooth texture with Parmesan’s crunch and its savory-sweet flavors—think briny bone broth, toasted nuts, butterscotch, and caramel—make this a decadent, melt-in-your-mouth experience.
Two Sisters Isabella Aged Gouda stands beautifully on its own as the perfect snack or dessert cheese, combining savory and sweet notes in perfect balance.
