Mahón-Menorca is one of Spain’s oldest and most celebrated cheeses, with a history stretching back to Roman times on the Mediterranean island of Menorca in Spain’s Balearic Islands. Named after the island’s historic port city of Mahón (Maó), the cheese earned Protected Designation of Origin (PDO) status in 1985, preserving its traditional production methods and ensuring that authentic Mahón-Menorca is made exclusively on Menorca. The island’s sea breezes, mineral-rich pastures, and humid maritime climate impart a distinctive character to the milk, giving the cheese its signature balance of buttery richness and subtle salinity.
Crafted from pasteurized cow’s milk and aged for approximately six months, Mahón Semi Curado represents the ideal midpoint between a young and fully matured Mahón. Cheesemakers continue to follow traditions that have been refined over centuries, including pressing the curd in square cloth molds—a practice that gives the cheese its distinctive shape and subtle imprint on the rind. During aging, the rind is often rubbed with olive oil and paprika, producing Mahón’s characteristic orange exterior while protecting the cheese as it develops complexity. At six months, the paste becomes firm yet supple, with concentrated buttery flavors balanced by a pleasant tang and hints of toasted nuts. Equally suited for entertaining or cooking, Mahón Semi Curado remains one of Spain’s most iconic cheeses and a delicious expression of Menorca’s rich cheesemaking heritage.
Mahón Semi Curado opens with aromas of fresh butter, toasted almonds, and sweet cream.
