From the rolling hills of southern Wisconsin – long regarded as America’s Dairyland – comes this month’s vibrant and herbaceous selection from Schullsburg Creamery. Founded in 1922 and family-owned for generations, Schullsburg Creamery has built its reputation on traditional cheesemaking methods and small-batch production. Located near the Illinois border in Lafayette County, the creamery benefits from rich pastureland and a strong dairy heritage that dates back to Swiss settlers who first brought cheesemaking expertise to the region.
On the palate, the cheese opens with mild, buttery sweetness and a delicate tang, followed by a clean burst of herbaceous freshness. The dill is lively but balanced — grassy, slightly citrusy, and gently savory — enhancing rather than overpowering the mellow Jack base. Subtle hints of sweet cream and light saltiness round out the flavor, creating a refreshing yet comforting profile. The finish is smooth and lingering, leaving a cool herbal brightness that invites another bite.
Its creamy structure also makes it exceptionally versatile when melted, where the dill becomes even more aromatic and integrated.

Jack ‘n Dill begins with pasteurized Wisconsin cow’s milk and is crafted in the style of Monterey Jack – a semi-soft, creamy cheese known for its mild, approachable character and excellent meltability. Fresh dill is blended throughout the supple paste, creating a striking contrast of snowy white cheese flecked with bright green herbs.
