Hoard’s Dairyman Farm Creamery in Fort Atkinson, Wisconsin, traces its roots back to one of the most influential names in American dairy history: W.D. Hoard, founder of Hoard’s Dairyman magazine and former Governor of Wisconsin. In 1899, Hoard established the Hoard’s Dairyman Farm as a living laboratory to demonstrate the benefits of scientific dairying at a time when the industry was just beginning to embrace modern, research-based agricultural practices. For over a century, the farm became renowned for its Guernsey herd—eventually one of the most celebrated purebred herds in the United States—and for shaping dairy standards adopted nationwide.

Building on this heritage, Hoard’s Dairyman Farm Creamery launched its artisan cheese program in the 2010s, using milk exclusively from its elite, pasture-raised Guernsey cows. These cows are prized for their naturally golden, high-butterfat, high-protein milk—an ideal foundation for lush, European-style cheeses. Today, the Creamery merges generations of dairy expertise with small-batch craftsmanship, producing specialty cheeses that honor Wisconsin’s agricultural heritage while showcasing the uniquely rich character of Guernsey milk.

SARK Triple Cream Butterkäse takes the classic German-style “butter cheese” and amplifies its decadence with the naturally elevated butterfat of Guernsey cow’s milk. The paste is pale gold, exceptionally smooth, and almost pudding-soft at room temperature.
