Nestled in the rolling foothills of the French Basque Country near the Pyrenees, Onetik has been producing traditional Basque cheeses since 1983. Located in Macaye, the creamery works closely with local family farms that raise goats, sheep, and cows on lush mountain pastures influenced by both Atlantic breezes and the rugged Pyrenean landscape. The name Onetik, meaning "the best" in the Basque language, reflects the creamery's commitment to preserving regional cheesemaking traditions while showcasing the exceptional quality of local milk.

Onetik's Tomme Pur Chèvre is crafted exclusively from pasteurized goat's milk and aged for approximately three months. This careful maturation transforms the fresh curd into a firm yet creamy cheese with a thin natural rind and a smooth, ivory-colored interior. Unlike many aged goat cheeses that become intensely sharp, Tomme Pur Chèvre retains an elegant balance of fresh dairy sweetness and gentle earthiness. The aging process develops layers of complexity while preserving the clean, delicate character of the goat's milk. Produced using traditional Tomme methods, the cheese reflects the Basque region's long history of mountain cheesemaking, where simple ingredients, careful aging, and exceptional milk combine to create cheeses of remarkable depth. Today, Onetik remains one of the region's premier producers, earning recognition for crafting authentic cheeses that celebrate the unique terroir of southwestern France.

Onetik Tomme Pur Chèvre offers aromas of fresh cream, wild herbs, and toasted almonds. Its firm yet creamy paste develops flavors of cultured butter, sweet goat's milk, hazelnuts, and subtle earthy notes with a pleasantly tangy finish. Serve with fresh figs, pears, honey, toasted walnuts, or crusty French bread. It also complements roasted vegetables and mixed green salads. Pair with Sauvignon Blanc, Sancerre, dry Chenin Blanc, sparkling wine, or a Belgian Saison. The cheese's bright acidity and delicate herbal character also make it an excellent companion to crisp pilsners or farmhouse ales.
