Naked Goat®, also known as Murcia Curado DOP, comes from Jumilla in Spain’s Murcia region and is produced by Central Quesera Montesinos, a cheesemaker known for its expertise with goat’s-milk cheeses. Murcia has a longstanding goat-raising tradition, and the native Murciana goat is particularly prized for producing milk rich in fat and protein. Central Quesera Montesinos has become closely associated with internationally recognized Murcian cheeses and also produces well-known cheeses such as Drunken Goat®, Caña de Cabra, and Capricho de Cabra.

Naked Goat® is made exclusively from pasteurized Murciana goat’s milk and carries the Murcia Curado DOP designation. Unlike Murcia al Vino, which is traditionally washed in red wine during maturation, Naked Goat® allows the natural character of the goat’s milk and extended aging to take center stage. The cheese is aged for approximately six months, considerably longer than many fresh or young Spanish goat cheeses.

During maturation, the cheese develops a firm texture and concentrated flavor while remaining remarkably approachable. Rather than being intensely “goaty,” Naked Goat® is characterized by a mild, balanced flavor and pleasantly sweet finish. Its combination of richness, gentle tang, and subtle nuttiness makes it an excellent choice for a cheese board, while its firm yet creamy character also lends itself beautifully to cooking and melting.

Naked Goat® offers a firm yet creamy texture with a mild goat’s-milk tang and flavors of sweet cream, toasted nuts, butter, and gentle earthiness. Six months of aging gives the cheese added depth and concentration while preserving its characteristically sweet, approachable finish. Serve it with Marcona almonds, honey, quince paste, fig preserves, olives, or crusty bread. It also melts beautifully over roasted vegetables or into warm sandwiches. Pair with Albariño, Sauvignon Blanc, dry Spanish white wine, sparkling wine, or a light-bodied red. Honey, nuts, and fruit preserves provide an especially delicious contrast to its savory, tangy character.
