What do you get when you take wheels of the award-winning Naked Goat® cheese and add black truffles? The Truffle Kid®, that’s what – our latest addition from Spain. This semi-hard Queso de Murcia DOP (Denominación de Origen Protegida, aka Protected Denomination of Origin, which means it has to adhere to strict rules regarding production and quality) comes to us from expert cheesemakers Central Quesera Montesinos in Jumilla, Spain. It is similar in style to Manchego but made with milk from goats instead of cows.

The Truffle Kid cheese starts with a premium base, Naked Goat – made from pasteurized milk from native Murciana goats – which is higher in fat and protein and adds remarkable richness. During the cheese’s six-month aging process, it is pierced, and black truffle paste is added throughout the wheels, which renders a gorgeous, marbled paste. Its rind is also lavishly coated with black truffle paste.

Piercing the cheese and coating the rind combine to lend black truffle’s distinct aromas and flavors, but in a delicate and balanced way that does not overwhelm the cheese. The cheese itself is milky and mild with a playful duality of sweet and tangy flavors. The marbling of truffle paste adds an earthiness that harmoniously elevates the cheese into a one-of-a-kind taste experience.

The Truffle Kid is a showstopper on its own but is a nice addition to a charcuterie board with freshly baked, crusty bread, Marcona almonds, jamón Ibérico, marinated olives, sun-dried tomatoes, and honey-roasted almonds. It is also a perfect melting cheese for burgers, ham sandwiches, fondue, macaroni and cheese, omelets, pasta, pizza, potatoes, and risottos. Pair Truffle Kid with a variety of wines like bubbly Spanish Cava (traditional method sparkling), crisp Albariño or Verdejo, and reds like Garnacha and Tempranillo.
