Kingston Creamery is a Wisconsin-based cooperative rooted in the state’s deep agricultural and dairy traditions. Located in central Wisconsin, the creamery is owned and operated by Amish and Mennonite farming families who have practiced small-scale, sustainable dairy farming for generations. This region’s fertile land, cool climate, and emphasis on pasture-based farming produce exceptionally rich, high-quality milk—an essential foundation for the creamery’s cheese program. Kingston Creamery focuses on time-honored methods, favoring careful handling, minimal intervention, and patient aging to let the milk’s natural character shine.

Best known for their blue cheeses, Kingston Creamery combines traditional Old World techniques with a distinctly American sensibility. Their cooperative model allows for meticulous attention to consistency and craftsmanship while supporting the rural communities that supply the milk. Cheeses are produced in small batches and aged with precision, resulting in balanced, approachable flavors rather than aggressive sharpness. Kingston Creamery’s work reflects the quiet excellence Wisconsin is known for—honest, well-made cheeses that prioritize quality, tradition, and drinkability at the table.

Amish Blue is a balanced, approachable blue cheese with a creamy-to-slightly crumbly texture and delicate blue veining throughout. Made from pasteurized cow’s milk and aged to develop depth without harshness, it opens with sweet cream and gentle earthiness before unfolding into mild blue spice, subtle minerality, and a clean, lightly salty finish. The blue character is present but restrained, making it smooth and rounded rather than sharp or aggressive—an ideal entry point for blue cheese newcomers while still satisfying seasoned fans.

Thanks to its balance and versatility, Amish Blue pairs beautifully across the table. Serve it with crusty bread, honey, toasted nuts, or fresh pears and apples on a cheese board. It also shines melted into sauces, crumbled over salads, or paired with grilled meats. For beverages, try off-dry Riesling, Sauternes, or Port for contrast, or reach for malty beers like brown ale or stout. For spirits, bourbon or rye highlights its creamy sweetness and savory depth.
