Grafton Village Truffle Cheddar combines savory cheddar tang with earthy mushroom, truffle, butter, and concentrated umami flavors. Serve with crusty bread, roasted mushrooms, potatoes, charcuterie, toasted walnuts, or simple crackers. It is especially luxurious melted into grilled cheese, macaroni and cheese, risotto, eggs, or burgers. Pair with Champagne, Chardonnay, Pinot Noir, brown ale, porter, or a Belgian-style ale.
Grafton Village Cheese traces its roots to Grafton, Vermont, where a cooperative cheese operation was established in the late nineteenth century. Revived decades later, the company has become particularly well known for traditional Vermont cheddar. Grafton Village Truffle Cheddar takes that classic foundation in a more indulgent direction, combining the tang and savory richness of cheddar with the unmistakable earthy character of truffles.
Made from raw cow’s milk, the cheese develops the firm body and concentrated dairy flavor expected from Vermont cheddar while allowing the truffle ingredients to provide an additional layer of complexity. Truffles and truffle oil introduce mushroom-like aromas and deep umami notes that naturally complement cheddar’s savory character. Rather than functioning simply as a flavored novelty, the combination works because both components share rich, earthy qualities. Its firm texture also makes the cheese highly versatile: it can be sliced for a cheeseboard, grated over warm dishes, or melted into comfort foods.
