Cropwell Bishop Creamery is a family-run English cheesemaker renowned for traditional Blue Stilton PDO. Located in Nottinghamshire, one of the counties permitted to produce Stilton, the creamery has built its reputation around careful handcrafting and traditional cheesemaking methods. Blue Stilton itself is one of Britain’s most celebrated cheeses and is protected by PDO status, meaning cheeses carrying the Stilton name must meet defined production standards and originate within the designated English production area.

Made from pasteurized cow’s milk, Cropwell Bishop Blue Stilton develops its characteristic blue veining as it matures. The cheese has a natural wrinkled rind surrounding a pale ivory-to-amber paste threaded with blue-green veins. Its texture offers an appealing contrast, remaining compact and crumbly enough to cut cleanly while becoming creamy on the palate. As the cheese matures, its initially buttery dairy flavors gain increasing depth, introducing peppery spice, earthiness, mushroom-like notes, and the distinctive savory character associated with traditional Stilton.
