Clawson Crimson® is mild, creamy, lightly tangy, and crumbly, with the cranberries contributing bright notes of sweet and tart fruit. Serve it with apples, pears, toasted walnuts, shortbread, oatcakes, honey, or fruit preserves. It also works beautifully crumbled into salads or incorporated into baked goods. For beverages, try off-dry Riesling, sparkling wine, hard cider, fruit-forward wheat beer, or a Belgian-style golden ale.

Long Clawson Dairy has been producing traditional British cheeses for more than a century, with roots in the Leicestershire village of Long Clawson. The dairy is especially well known for its Stilton and specialty blended cheeses. Clawson Crimson® combines classic Wensleydale-style cheese with sweetened dried cranberries, creating a colorful and approachable English specialty that is particularly popular for entertaining and holiday cheese boards.

Made from pasteurized cow’s milk, the young cheese has a fresh, creamy character and a lightly crumbly texture that makes it particularly well suited to fruit. Sweet-tart cranberries are distributed throughout the pale cheese, providing both visual contrast and bursts of fruity flavor. Rather than overwhelming the delicate dairy character, the cranberries complement its gentle acidity and creamy sweetness. The result is a versatile cheese that can be served on its own, incorporated into desserts and baked dishes, or used to bring a colorful sweet-savory element to a cheeseboard.
