Carr Valley’s Fontina pays tribute to the famous Italian Alpine cheese while showcasing the rich, high-quality milk produced by Wisconsin dairy farms. Made from pasteurized cow’s milk and aged for approximately two months, this semi-firm cheese develops a smooth, creamy body with excellent melting qualities. While younger than traditional Fontina Val d’Aosta, Carr Valley’s version emphasizes fresh dairy character and buttery richness, making it exceptionally approachable and versatile. The careful aging process creates a supple texture with just enough firmness for slicing while retaining the creamy consistency that makes Fontina a favorite for cooking.
