Swiss cheesemaking has long been defined by its network of village dairies, where local farmers work together to transform fresh milk into distinctive regional cheeses. This tradition dates back to 1815 with the establishment of Switzerland’s first cooperative cheese dairy in Kiesen. Handcrafted Cheese Tradition honors that legacy by partnering with traditional Swiss village and mountain dairies that continue to produce cheese using time-honored methods and fresh regional milk. The historic dairy buildings of Kiesen remain preserved as cultural landmarks and are commemorated in the brand’s logo.

The Rocky 15 Month is crafted by cheesemaker Timon Vogel in Thurgau, a scenic region in northeastern Switzerland known for its fertile grasslands and exceptional dairy production. Fresh milk from local farms is delivered directly to the creamery while still warm, where it is carefully tested and transformed into cheese. The quality of the region’s pastures, climate, and soil contributes to the richness of the milk and ultimately the character of the finished cheese. Vogel’s dedication to traditional craftsmanship has earned international recognition, with The Rocky receiving Gold Medals at both the 2024 World Championship Cheese Contest and the World Cheese Awards.

Aged for 15 months, The Rocky develops a semi-firm, smooth texture that gently collapses on the palate before giving way to a clean, lingering finish. Its full-flavored profile balances savory and sweet elements with notes of toasted corn, roasted hazelnuts, browned butter, and dulce de leche. The cheese’s rich complexity makes it an excellent addition to a cheeseboard or enjoyed on its own. Pair it with a malty Bock beer, Belgian-style ale, dry Riesling, Chardonnay, sparkling cider, or a lightly oaked Pinot Noir to complement its nutty, caramelized character.
