Cooking With Cheese
Here are a few tips on cooking with cheese. Certain cheeses, like Gruyere, Parmesan, and Mozzarella, are used regularly in cooking. Chefs enjoy using these cheeses because they have an excellent flavor and also create desirable textures in the food. However, other cheeses such as blue cheese and goat cheese, which are not commonly used in traditional foods, can also have delicious results.

An important thing to keep in mind when cooking with cheese is to try not to overcook it. It should be cooked slowly, and added toward the end of the preparation. If it is heated over a certain temperature the cheese coagulates and separates, and may become tough and stringy. The likeliness of this is lessened if the cheese is combined with flour, bread crumbs, or other starchy food.
